This Madras variation is bold, coconut-rich, and lightly spicy — made simply by transforming our Raizada Base Curry with coconut cream, desiccated coconut, and a touch of chilli. It’s fast, fragrant, and perfect for anyone wanting a deeper South Indian flavour without complicating the cooking process.
INGREDIENTS
• 1 full Raizada Base Curry (made using our seasoning + base method)
• ½–1 cup thick coconut cream
• 1–2 tbsp desiccated coconut
• A pinch of chilli
• A splash of vinegar
METHOD
Prepare the Raizada Base Curry.
Stir in the coconut cream and desiccated coconut.
Add a pinch of chilli for heat and a splash of vinegar for balance.
Simmer for 3–5 minutes until thick, creamy, and aromatic.
TIP:
Use full-fat coconut cream for the richest flavour.
